★示範料理：銀魚芥藍苗與帕克哩管麵，240元

★外型：狀如橡皮水管般粗厚，煮好後每一口都是兩片麵皮一起入口，麵皮間容易窩藏醬料，充滿味覺層次。

★醬汁：百搭型麵條，清爽蔬菜海鮮或傳統濃郁肉醬都適合，可呈現麵條咬勁口感。

★主廚的話：「帕克哩」是拿坡里土話「巴掌」之意，看起來就像一片巴掌，面積大，更容易呈現醬料滋味。

★記者的話：碩大的身型，一開始讓人懷疑這咬得動嗎？結果入口竟有如此彈性與飽足感，加上清爽的銀魚、番茄與芥藍菜，讓人開胃。
